Bún chả – Vietnamese Grilled Pork with Vermicelli Recipe

500g pork, marinade with
1 tbsp minced garlic
1 tbsp oyster sauce
1 tbsp sugar
2 tbsp fish sauce
2 tbsp minced shallot
2 tbsp caramel sauce (or 1 tbsp molasses/honey)
1 tsp seasoning powder **
1/2 tsp ground black pepper

To make caramel sauce:
1/2 cup sugar (100g)
1/2 cup hot water 120ml

To make pickles
1 cup thinly sliced kohlrabi
1 cup thinly sliced carrots
2 tsp salt
1 tbsp sugar
2 tbsp vinegar (5% acid)

Fresh lettuce and herbs
Minced garlic and chili
Thin rice vermicelli

**For seasoning powder, you can use Knorr Chicken/Pork Flavor

  2. Hi Helen, first off I want to let you know how much I enjoy your recipes. I’m trying the Bun Cha now. I downloaded the recipe and proceeded to season the pork according to the written recipe, and I found it strange how much nuoc mam and all the other seasonings were used. Then I figured I’ll watch the video.. and lo and behold, the video showed that the seasoning amount was HALF of what was in your written recipe (basically, the written recipe DOUBLED the seasonings). Thank God I haven’t cooked the meat yet, so I can still wash it out and start over. But please fix your written recipe so that it accurately reflects what is in your video. Thank you.

      +Tina Le the seasoning in the written recipe is doubled because it is used to marinate both pork sliced and pork mince. If you read carefully I said use half the seasoning to season pork slice and the other half for pork mince
