  14. I JUST made this and had a slice! I used whole wheat flour for just a quarter of the flour mixture, and it may be because of that, but I only had to bake it for 60 minutes, and noticed that the outside was quite hard almost like a soft, chewy cookie and the inside was soft and banana-y- not exactly like a traditional banana bread but hey it’s a lot healthier so no complaints ๐Ÿ™‚ I also added some walnuts but wish I added some more! I enjoyed it and am excited to see how the flavors will develop as it cools. Thank you!

  18. My banana bread is in the oven right now and the batter already tasted delicious. But I used some oat flour instead of wheat, because we hadn’t had any flour or sugar in the house. I substituted the sugar with some brown cane sugar and a bit of honey (because my brown sugar was almost empty too). It probably won’t take as long as the original version I guess, because even after 10 minutes it looked slightly done, so I may put it in the oven just for 40 minutes…
